INGREDIENTS
Little Sesame Preserved Lemon Hummus
1 cup leftover rice
1 small cauliflower head
1 can chickpeas
fresh herbs- dill, mint, parsley
pickled veggies-cucumber, turnips, beets, olives or whatever you prefer
toasted sesame seeds
shawarma seasoning
pistachios
olive oil
harissa
dates
lemon
honey
feta
*optional - purple rice paper to make rice crisps
PREPARATION
1. Preheat the oven to 400F.
2. For the crispy rice- add a tbsp or so of harissa paste to leftover rice, stir to combine then spread in a thin layer on a parchment paper lined sheet pan (or air fryer basket) and bake for about 40 minutes until golden and crispy.
3. For the roasted cauliflower- separate into florets and also use the leaves too! Drizzle with olive oil and shawarma seasoning and toss to combine then add to a sheet pan and bake for 40 minutes.
4. For the crispy chickpeas- Drain the chickpeas and pat dry then drizzle with olive oil, shawarma seasoning & salt. Stir to combine then bake until golden and crispy giving them a stir after about 10 minutes or so.
5. Prepare the toppings- Roughly chop the pickled veggies, dates, feta, fresh herbs and pistachios
6. For the dressing combine a few tbsp of Little Sesame Preserved Lemon Hummus, fresh squeezed lemon juice, a drizzle of honey, salt and pepper to taste.
7. To fry the rice crisps- heat olive oil over medium heat until shimmering. Cut the rice paper in half and drop into the hot oil. The rice paper will crisp and puff up immediately. Remove to a paper towel lined tray to drain and sprinkle with salt.
8. To plate start with a dollop of Little Sesame Preserved Lemon Hummus and top with the crispy rice then add the pickled veggies, dates, feta, toasted sesame seeds, pistachios, roasted cauliflower, crispy chickpeas and fresh herbs and drizzle with the preserved lemon dressing. Garnish with lemon and a rice crisp and enjoy!
