Winter Caesar Salad with Crispy Pita

Who doesn't love a good caesar salad?? Clearly not us because we've been making this Winter Caesar with Crispy Pita on repeat. You will too after watching this. Bet on it 🤝

Salad Ingredients

Lettuce- ideally some hot pink radicchio (from your fav farmer)
Pita
Olive Oil
Dill
Pecorino/Parmesan

Dressing Ingredients

1 tbsp Capers
2 tbsp @eatlittlesesame Preserved Lemon Hummus
2 cloves Garlic, grated on microplane
1 (heaping) tbsp Dijon, we love mustard
1 1/2 Lemons, juiced
1 tsp Agave
4 tablespoons Olive Oil

Preparation

Cut up your greens and throw them in a large bowl.

Rip up your @eatlittlesesame pita and toss it with olive oil and salt. Bake until crispy.

Throw the dressing ingredients (sans olive oil) into a small bowl and whisk until smooth. Once smooth, add olive oil (slowlyyy) and simultaneously whisk to emulsify.

Pour your dressing over your greens, add in your pita and mix. Top with fresh dill and shaved pecorino or parm.

Et viola - the best caesar salad you've ever had 🥗
