Pita Breakfast Sandwich with Preserved Lemon Hummus

Ingredients

@eatlittlesesame pita
@eatlittlesesame preserved lemon hummus
3ish eggs
Persian cucumber (English cucumber works too)
A bunch of fresh herbs (Dill, Cilantro, Parsley, Mint)
Red onion
@getgraza drizzle olive oil
Red wine vinegar
Pomegranate molasses
Salt & pepper

Preparation

Chop cucumber in 1/4 inch dice and thinly slice onion (we used a mandolin, but you dont have to unless you’re feeling chef-y)

Toss herbs, cucumber and red onion into a bowl and dress with olive oil, vinegar, pom molasses, plus salt and pepper to taste.

Toast your pita.

Slowly scramble your eggs; start in a heated pan, then let it ride low and slow. Slow is good here.

Open up the warm pita and lather it with our Preserved Lemon Hummus; half a container should do 😉

Then stuff the pita with your herb salad and your eggs.
