Mexican Caesar Salad

If the infamous Caesar salad took a trip to Mexico, this crowd pleasing recipe would be the result. So perfect for a summer's day, that everyone, even the kids, will love it! 

Ingredients for the salad: 

2 heads Romaine lettuce, chopped

1 cucumber, sliced

2 tomatoes, diced

4 radishes, thinly sliced

¼ cup cilantro, chopped

1 jalapeño, thinly sliced

1 cup Vista Hermosa Totopos, crushed

for the dressing:

2 Hatch Chili Peppers, roasted and diced

¼ red onion, finely chopped

2 tbsp vinegar

½ cup Little Sesame x Vista Hermosa Street Mexican Corn Hummus

½ teaspoon

Assembly Instructions:

  1. In a large bowl, combine the romaine lettuce, cucumber, tomatoes, radishes, cilantro, and jalapeño.
  2. In a small bowl, whisk together the hatch chili peppers, red onion, vinegar, hummus, and salt. 
  3. Dress your salad with the dressing, add a squeeze of fresh lime juice, top with crushed Totopos, and serve!
