Try these roasted cauliflower steaks served over our Golden Garlic hummus and topped with a fresh herb salad, juicy pomegranate vinaigrette, chopped pistachios and feta for your next date night at home.
INGREDIENTS
I head cauliflower (makes 2 steaks…and some extra florets for another meal or snack)
Little Sesame Golden Garlic Hummus
1 bunch fresh mint
1 bunch fresh parsley
pistachios, roughly chopped
1 pomegranate
1 lemon
blackcurrant dijon mustard, 1 tsp or so
marinated currants, cranberries and raisins leftover from the holidays (marinated with white wine vinegar, thyme, honey, mustard seed, orange and lemon rind)
olive oil
½ tsp cumin
salt & pepper
*optional - feta cheese
PREPARATION
1. Preheat oven to 400. Cut the cauliflower into thick steaks (leaving any leaves attached!), brush all over with olive oil and sprinkle with salt and pepper. Bake for about 20 minutes or until golden and tender.
2. To a bowl add the marinated fruits, pomegranate arils and some of the pomegranate juice, fresh squeezed lemon juice, dijon mustard, a few tbsp of olive oil and salt & pepper and whisk to combine…add more juice if you want and adjust seasoning to taste.
3. Roughly chop the mint and parsley and just before serving toss with some of the vinaigrette.
4. To plate- add a dollop of golden garlic hummus to the plate and top with the cauliflower steak, herb salad, pomegranate vinaigrette, extra pomegranate arils , roughly chopped pistachios and feta. Drizzle with more vinaigrette and enjoy!
