Creamed Spinach with Seared Salmon
Ladies and gents' ... on tonights menu we have "CREAMED SPINACH" WITH PRESERVED LEMON HUMMUS and a lil bonus seared salmon on top! A delicious way to sneak in some hummus as a dairy substitute without sacrificing any creaminess.


INGREDIENTS

garlic
olive oil
salmon
salt
pepper
za'atar
red pepper flakes
spinach
Little Sesame preserved lemon hummus
chili oil


PREPARATION

Add your sliced garlic to a pan with olive oil and set it on low heat. While that warms, prep and cut your salmon, then season with salt, pepper, and your seasoning of choice. We went with our favorite za'atar from Z&Z.


Add your salmon to a hot cast iron pan with oil, skin side down. Let it sit for a few minutes, then flip and transfer your skillet right into the oven at 350 degrees.


Toss some red pepper flakes into your garlic and oil pan, then add your spinach. Let the spinach cook down, then add in your Preserved Lemon Hummus. Toss it all together and plate.


Take your salmon out of the oven and place it over your bed of creamed spinach, skin side up. Drizzle with some chili oil and top with pepper and flaky sea salt.


And there you have it, folks, an easy weeknight dinner that's chef-approved.
