Artichoke and Preserved Lemon Hummus Toast

It’s summer! (well, almost). What better way to celebrate the warmer weather than artichoke, lemon, and fresh herbs? We got back in the kitchen and cheffed up a lovely, summery appetizer for your next outdoor get-together. Enjoy!

 

INGREDIENTS

Artichoke
Lemon
Za’atar
Extra Virgin Olive Oil
Daikon Radish
Mint
Dill
Sprouts
Our Preserved Lemon Hummus
Bread of Choice
Sesame Seeds and/or Zab’s Hot Honey

 

PREPARATION

Cut your artichoke by removing the green outer layers until you’re left with a dark yellow core. This ain’t easy! Feel free to substitute this step with frozen or canned artichoke to make your life a bit easier. 

Cut into quarters and simmer in a pot of boiling water with lemon and salt. Once tender, remove from the pot and toss in a bowl with more salt and za’atar, and bake at 375 degrees for 10-15 minutes.

While your artichokes are in the oven, slice your radishes – the more colorful, the better! Toss those in a bowl with mint and dill (go as heavy on the herbs as you’d like.) Finally, dress your herby radishes with good olive oil and flaky sea salt. 

Toast your bread of choice, and then start assembling. Layer on a healthy amount of hummus, followed by your artichokes and herb mixture. Top it all off with your sesame seeds and/or hot honey if you’re feelin’ fancy!
